Food insecurity rates have skyrocketed during the COVID-19 pandemic, doubling overall and tripling among households with children. Rates are especially high for Black and Latinx households. The FIRST project, funded by the National Science Foundation, aims to understand the impacts of the pandemic on people's experiences of food insecurity and coping strategies. A team of researchers and I are conducting qualitative research with a diverse group of families across five states (Michigan, Mississippi, North Carolina, South Carolina, and South Dakota), documenting how the pandemic has affected how families shop for, cook, and eat.
